3slicesbacon, diced (turkey or pork bacon)
2lb YukonGold potatoes, peeled and diced (about 4 cups)
32 oz chicken stock (or vegetable broth for a vegetarian option)
1 1/4tspsalt
1/2tspblack pepper
1/2tsp garlic powder
1/2tspdried thyme (or dried chives)
1/2cupcanned unsweetened coconut milk
Instructions
Sauté the Sausage, Bacon, and Onion: Heat olive oil in a large soup pot over medium-high heat. Add diced bacon, sliced sausage, and diced onion. Sauté, stirring frequently, until the onion is tender and the bacon becomes crispy, and the sausage is browned.
Add Broth and Potatoes: Add chicken stock and diced potatoes to the pot. Season with salt, black pepper, garlic powder, and thyme. Bring to a boil, then reduce the heat to a simmer. Cook for 5-8 minutes or until the potatoes are tender and easily pierced with a fork.
Blend the Potatoes: Remove 1 to 2 cups of the potato mixture from the pot. Place it in a blender with the coconut milk and blend until smooth. The mixture will have a mashed potato-like texture.
Combine and Stir: Add the blended mixture back to the soup pot, stirring to combine until the soup is creamy. Adjust the seasoning if necessary.
Serve: Ladle the soup into bowls and top with your favorite toppings, such as shredded cheese, crispy bacon, or fresh herbs.
Notes
Substitutions: You can substitute the sausage with ground turkey or crumbled breakfast sausage. For a vegetarian version, use plant-based sausage or tempeh.
Broth Options: Feel free to use vegetable broth if you’re looking for a non-meat version. For a richer flavor, opt for homemade broth.
Texture: For a thicker soup, blend 2 cups of potatoes instead of 1. You can also add a slurry of cornstarch and water if you want extra thickness.
Toppings: Add cheese, sour cream, or fresh herbs for extra flavor.
